Food Fare: Website helps familes handle all those leftovers
Beth Bellor of Bay City e-mailed us to say she had half of a large cabbage left over from a recipe, and because they dont eat much cabbage and do not enjoy cole slaw, she was stumped on what to do with the leftovers.
Beths husband loves cabbage rolls, she said, so this Stuffed Cabbage Casserole recipe she found at bigoven.com.

I have used it for when I had odd things around, such as coconut milk, and also when I just need a new way to turn chicken, onions and carrots into dinner, she said.

Pear Salad
1 package (8-ounce) cream cheese
1 cup Cool Whip, thawed
1 can (15-1/4-ounce) pear halves, drained
1 cup boiling water
1 package (3-ounce) lemon gelatin
Place cream cheese, Cool Whip and pears in a blender; set aside
Combine gelatin and water until dissolved. Pour into blender with other ingredients. Blend until well mixed. Pour into bowl. Refrigerate until set.

Red Cabbage Casserole
2 cups red cabbage
1/2 cup celery, sliced about quarter-inch thick
1/4 cup pineapple tidbits
Dressing:
1 tablespoon minced onion
1/2 cup Marzetti Lite dressing
2-3 tablespoons pineapple juice
2 tablespoons vinegar
1 tablespoon hot, sweet mustard
3-5 drips Tabasco sauce
1-2 tablespoons sugar, optional
2 tablespoons sesame seeds, optional
Toasted pine nuts or walnuts
Combine cabbage, celery and pineapple in large bowl
Combine dressing ingredients, pour over top. Eat soon to retain true color of the dish.
